Waldorf Coleslaw


1/2 cup yogurt
1/4 cup tofu mayonnaise
1 tsp lemon juice
1 tsp dried, chopped parsley


2 cups cabbage, grated
1 carrot, grated
1 cup apple, chopped
2 stalks celery, chopped

1. Prepare dressing.

2. Combine vegetables and applies.

3. Gently stir dressing into salad.

4. Sprinkle the top of each serving with walnuts.

5. Serve immediately.

Waldorf Coleslaw

Make Your Own Tofu Mayo

1 cup tofu, drained
2 tbsp oil
4 tbsp vinegar

Blend tofu in blender or food processor until smooth. Slowly add oil in a stream through the top, while blades are still turning. Blend until thick. Chill.
